A beautiful photo on Pinterest encouraged me to try this recipe. I was looking for some interesting vegan recipe for dinner and I liked this recipe very much because it is incredibly simple and quick to make. It is also very delicious. I must try it out with the chicken. I have made this recipe a few times and peanut butter enriches the taste of the whole dish, so be sure to remember about it.

Ingridients: (2 large servings)
Vegetables:
-2 cups of cooked canned chickpeas
– broccoli, about half a head
-1 onion
-1/2 peppers, preferably red
-1 teaspoon of grated fresh ginger
-2 cloves garlic grated
General Tso’s sauce:
-1/2 cup of water
-2 tablespoons tomato paste
-1 tablespoon of peanut butter (do not omit)
-2 tablespoons of rice vinegar
-4 tablespoons of soy sauce
-2 tablespoons of plain sugar, coconut sugar or honey
-2 teaspoons of hot pepper (you can add more)
-1 tablespoon of sesame oil (or cold pressed canola oil)
-2 teaspoons of mustard
-2 teaspoons of potato starch (or corn starch)
-1/2 teaspoons of ground pepper
-oil for frying
1.Drain the chickpeas. Cut the onions, peppers and broccoli. Grate garlic and ginger.
2.Combine all the ingredients of the sauce.
3.Fry onions for 2 minutes to slightly soften. Add grated garlic, ginger, paprika and broccoli. Mix all and fry for 2 minutes. Add drained chickpeas.
4. Add the sauce to the vegetables, mix thoroughly and simmer for about 3 minutes. Serve with rice.
